Easter Time #3

EASTER MORNING!!!!!!!!!!!! How wonderful is Easter? So wonderful! And how blessed are we to know that Easter means we are redeemed. Jesus died on the cross for me and then he rose again, for me! I feel so blessed to wake up in a warm bed with a roof over my head and family that loves me. And when I woke up on Easter Sunday, I smelled the wonderful aroma of freshly baked cinnamon rolls that mom let rise all night long........ YUMMMY......
Granted, I didn't get to eat any; I had the world famous Enfamil bottle. But those cinnamon rolls sure look good! Grandma, Aunty Leah, mom and dad sure did dig right into them! After eating, Grandma and Mom scurried around the kitchen for several hours preparing the traditional Easter Sunday feast - Springfield-style Cashew Chicken. Yes, you read that right. Not leg of lamb or pork roast or ham or turkey.... Springfield-style Cashew Chicken! I guess it's a family tradition to make this... Grammy stole the real recipe from a restaurant years ago and it's a family favorite. But because it takes practically hours to make enough for everyone, it's a meal that only gets made on special occasions. And this isn't your ordinary cashew chicken you get at the run of the mill Chinese place down the street (well, unless you are the side of the family who live near Springfield!). This is a breaded chicken nugget piece, fried to perfection in just the right seasonings on top of a bed of marvelous fried rice. Poured over the top is a brown oyster sauce, then sprinkled with green onions and cashews. My mouth is watering just thinking about it!! And as usual...we always make enough for about six families!
I have to stop talking about food now....otherwise I will want some. And I'm not allowed to have added rice in my milk for another two months.... *sigh*
So Easter morning....I had a VERY LARGE Easter basket laid out across the living room floor!! Actually, three Easter baskets... Two from Grandma and one from Grammy! Mom just added a few things she had bought me. Check out all my goodies!!!!!
And I'm sporting my lovely Easter dress that my Great Aunt Lou Anne bought for me! But as you can see in the photo, I have a wonderful talent of kicking off my socks. I don't like to have socks on, becuase I have a magical way of making them disappear when the grown ups aren't looking! I can even make shoes over the socks disappear... Seth, Ethan, Meyer, Clayton and Olivia (my fellow baby readers) let me know if you need to know the secret...
Another wonderful thing about Easter is all the family coming together! Not only had Grammy, Gramps, Grandma and Aunty Leah come to visit for the weekend, but Great Grandpa Vencil and Great Grandma Zelpha came for dinner. So did Grant Kathy, Great Uncle John, and Cuzaunt Katee. Ethan is celebrating spring break in New York City (he got to visit the "King of Queens" house!!!! Not fair! I should have been a stowaway in his bag!) While Kathy, Grammy, Grandma and Mom were putting the finishing touches on dinner, I got to hang out with Vencil and Zelpha in the living room. See, I'm wearing my new hat that has bunny ears!! People tend to think I am the cutest baby ever when I wear these, so I wear them often...
Have I ever mentioned my mom is wacko? Well, she is. She has this crazy tradition of holding the camera out at arm's length and taking a photo of herself with people. I am a bit mad at her for not doing it with me yet, but that's probably for the best, as I still need to be supported by BOTH hands. Anyway, here's mom and Katee...
